Michael Jackson’s Daughter Paris

From what I understand, this was an impromptu, unplanned appearance by the late King of Pop’s daughter at his memorial service earlier this week. It is absolutely heart wrenching, and puts his life in the right perspective.

Jazzed Up Can ‘O Soup

This isn't my soup...but it looks good too!

A bowl of soup sounded good the other day.  However, the plain old chicken and noodles that came out of the can just didn’t look that appetizing…  So, I started to prowl through my cupboards and fridge. 

There was some steamed brown rice left-over from dinner the night before, and this, together with sliced carrots, made for a delicious, hearty bowl of soup.  It also went much farther than the simple canned soup by itself would have.

Zesty, No-Yeast Pizza

I always dip my crust in ranch dressing!

So, what do you do when you’re craving pizza but have no yeast?  Well…I got online and searched for a “no yeast pizza dough” recipe.  It took some digging, but I finally found a very simple recipe at Cook .com

  
2 c. flour
1 tsp. salt
2 tsp. baking powder
2/3 c. water
1/4 c. vegetable oil
  
Mix flour, salt, baking powder and water. Knead on floured counter just until workable and spreadable, about 2 minutes. Put on pizza pan, with fingers spread vegetable oil on crust (helps so tomato sauce won’t soak in crust) 

 

Now…for the toppings.  I did not have any of the “traditional” pizza toppings on hand, so I had to ad lib!  (Can I use that phrase in this context?)  Some friends had given me a couple jars of this Cajun chili sauce, which was essentially tomatoes, peppers, onions and garlic.  I spread a thin layer of this.  For the cheese (pizza has to have cheese), I found half a block of  Parmesan in the fridge.  Parmesan is a bit stronger than mozzarella or even cheddar, but I like it.  And finally, I sliced two breakfast sausage links over the top, added some Italian seasoning and popped it into the oven. 

I baked it at 400F for about 30 minutes (until the cheese was bubbling and the crust had cooked thoroughly).  The result was bursting with zesty, mouth-watering flavors.   It was not exactly what you would get from the local Pizza Hut–but maybe better.  A side of salad and glass of ice cold water made it a meal!
